
Let’s cool down from the summer heat with these Yumi Watermelon and Coconut Popsicles. Yumi is no ordinary watermelon - it’s intensely sweet and flavorful, with a spectacular crunchy texture.
Ingredients
2 pounds Yumi watermelon, cut into squares
1 lime, juiced
2 tablespoons honey
Pinch of sea salt
2/3 cups coconut milk
Directions

Place the watermelon, lime juice, honey, and salt into a blender and secure the lid.

Turn the machine on low speed and slowly increase to the highest speed.

Use the tamper to press ingredients into the blades. Continue to mix about 30 seconds until the mixture is smooth and moving fluidly.

Stop the blender and pour the watermelon puree into the popsicle molds filling them 2/3 full.

Top off the popsicle molds with the coconut milk, then gently stir it into the mold using the kabob skewer to create a swirl effect. Don’t over mix.

Place the popsicle stick/lids on the molds and then place in the freezer. Freeze for at least 12 hours and enjoy.
